Louis Pasteur signed presentation copy of his noted ''Memoire Sur La Fermentation Alcoolique.'' Published by Mallet-Bachelier: Paris: 1860. Inscribed to his colleague Jean-Baptiste Boussingault in ink on the front wrapper: ''A Monsieur Boussingault, membre de l'Institut, hommage respectueux,'' translated to English, ''To Mr. Boussingault, member of the Institute, a respectful tribute.'' Signed clearly ''L. Pasteur''. Originally published in volume 58 of ''Annales de Chimie et Physique'' in 1857, Pasteur's ''Mémoire'' marks the culmination of a series of reports on the function of sugars and yeast in alcoholic fermentation. In the study, Pasteur successfully caused fermentation in a nitrogen-free environment, which debunked the longstanding belief that fermentation was a purely chemical process. This work would prove vital in the coming years as Pasteur and Bernard began their work in ''Pasteurization.'' Original book with brown wrappers has been bound in contemporary maroon leather boards with gilt lettering on the cover. Original wrappers have significant dampstaining, foxing and chips along edges, though archivally restored. Book measures 6.25'' x 9.5'' and is in very good condition.
