Measures 8.75” x 6” closed and 8.75” x 12” open. The menu is printed on white paper with yellow and maroon colors on the cover. There is some wear on the corners. Images of the famous Harvey girls are located on the front cover on the left side. The menu includes everything from breakfast items, to sandwiches, to a long list of desserts and drinks. Fred Harvey is credited for creating the first chain restaurants in American. English born, he came to the US in the mid 19th Century and began a career in food service as a busboy. As an adult, Harvey began to establish restaurants around railroads, when he died there where over 47 Harvey House restaurants, 15 hotels, and 30 dining cars operating on the Santa Fe Railway.
