Blue Grass Cook Book Compiled by Minnie C. Fox The Blue Grass Cook Book
The Blue Grass Cook Book Compiled by Minnie C. Fox With an Introduction By John Fox Jr. Illustrated with Photographs By A. L. Coburn. (New York: Fox, Duffield & Company, 1904), first edition, xliii, 350 pages, original gray cloth, 12mo (5.25" x 7.5"). First, a disclaimer: this cataloguer grew up in the great Commonwealth of Kentucky and remembers how wonderful bluegrass cooking can be. I will try to honestly describe this book, though my mouth is watering after just looking through the contents pages.

This is an important book as it was the first to give credit for southern hospitality to African American cooks, acknowledging the role of black culinary genius. Minnie C. Fox was a Kentucky socialite, the sister of legendary regional author John Fox, Jr., who wrote the introduction. The ten (+ frontispiece) beautiful halftone photographs were taken by Alvin Langdon Coburn, who was one of the finest young photographers of the day. They have titles such as "The Turbaned Mistress of a Kentucky Kitchen," "Broad, Portly and Kind of Heart," and "A Typical Blue Grass Cook." This landmark cookbook is in fine condition with just a minor bit of soiling to the edges and two previous owners' names and addresses written in the inside front. Several additional pages of handwritten recipes will be included as found. Always remember- for the best hams, "kill your hogs when the wind is from the northwest."
